I’m over halfway done with the Whole 30 and I must say, it’s been rather easy this time around! I am looking forward to the end and having some pumpkin baked goods (pumpkin bread, donuts, muffins, the list goes on…) but I haven’t had any cravings or slip ups.
Since I just went to Costco on Sunday to stock up, I thought I’d share my Costco Whole 30 staples with you (especially if you live in the Milwaukee area – I go to the Pewaukee Costco most often.).
- Thai Kitchen Coconut Milk
- Organic Pumpkin
- Tomato Paste
- Organic Marinara Sauce
- Amy’s Chunky Vegetable Soup
- Organic Chicken Broth
- Chosen Foods Avocado Mayo
- Coconut Water
- Coconut Oil
- Almond Butter
- Produce (organic when possible):
- Spinach / Power Greens
- Cauliflower rice
- Freezer (no meat – we get that from Butcher Box):
- Wild Caught Shrimp
- Wild Caught Salmon
- Big bags of veggies – broccoli, stir fry, etc.
- Organic frozen mixed berries
- Unsweetened, unflavored almond milk
- Organic, cage free eggs
I find that I can make almost any recipe if I have these items on hand. A few of my favorite recipes so far during this round of Whole 30 are: Crockpot Carnitas (I left out the orange juice because I didn’t have an orange), Picadillo Tacos (I left out the raisins and ate it over lettuce like a Chipotle bowl), and this Easy Breakfast Casserole.
To be honest, most of the time I don’t follow a recipe, I just grab a few things and make something up. When we’re super low on groceries and I’m really scraping the bottom of the barrel, I almost always end up making a curry. Combine some chicken broth, coconut milk, curry powder, a little tomato paste/pumpkin, any veggies, and meat – then serve over cauliflower rice!
