There hasn’t been much coming out of this kitchen lately, but I’m thinking that now that I’m about two months postpartum, I should probably start putting in some effort to get back in shape. So, today I’m sharing five salad recipes that will be in regular rotation in the Gosh household these next few months. Maybe it’s just me, but the hot weather definitely has me craving fresher, lighter meals during the summer. These could work as side dishes or as the main course and are great to bring to a cookout. Plus, they can all be easily adapted to fit any dietary guidelines you like to follow, too – gluten/dairy free, vegetarian, etc. – enjoy!
This one is SO good, you guys. Skip the cheese if you are dairy free and add some grilled chicken, shrimp, or steak to make it the main course. You WILL go back for seconds!
The base of this dish is veggies so I’m gonna go ahead and call this a salad 😉 the chicken sausage and potatoes make this filling enough for a meal but you won’t feel like you need to unbutton your pants afterwards. A win-win in my book!
I’m not ashamed to admit I’ve already made this salad twice this week. It’s got an asian-inspired flavor profile and is seriously addicting.
Salmon is my favorite fish so this recipe is high on my list (salmon and capers…who can resist?!). I use gluten free pasta instead of the orecchiette. Serious YUM.
This is another loose interpretation of the word salad but hey, it sounds delicious. I haven’t made it yet but I know the husband will be thrilled because (1) meat, (2) BBQ, (3) ranch. It’s not often you can combine those and end up with a healthy recipe, but this one looks like it hits the jackpot.
